Cabbage stir fry

Growing up in India, cabbage was to me what brussel sprouts is to the kids in the US. I detested it and my mother had to find various ways to include this healthy veggie into my diet. She often made this dish and then instead of serving it with roti/rice/dal, she made wraps or sandwiches stuffed with it. And that always had mini Nivi asking for more. Two decades later, i still make this stir fry in abundance and eat it with roti/rice/bread/tortillas and it never dissapoints!!


Ingredients:

- 1 medium cabbage ( sliced)

- 1 shallot diced

- 1 green chilly (optional)

- 3 cloves of garlic diced

- 1 medium potato chopped in small squares

- 1/2 cup frozen/fresh green peas

- 1 tsp cumin seeds

- 4 tsp garam masala ( Feel free to adjust )

- 1 tsp coriander powder

- 1 tsp red chilli powder

- 1 tsp tumeric

- salt to taste

- 1 tbsp neutral oil ( I used vegetable)


Recipe:

- On medium heat, heat the oil and add cumin seeds.

- When they start to sizzle, add the garlic and shallots and saute till transluscent ( About 2-3 mins)

- Add the cabbage, potato and spices and mix together.

- Let this cook on low-med heat for 15 mins with a lid 50% covered.

- Add peas and cook uncovered for another 5-10 mins. Depending on how crunchy you like it, you can take it off sooner once you are sure the potatoes cooked through.

- I ate mine alongside dal and rice. And leftovers in a sandwich :P Feel free to experiment with a rice bowl ( rice + cabbage + salad + fav dressing), tortilla wrap, sandwich, puffa pastry filling, etc. The sky is the limit, Enjoy :) :)
