Fudgiest chocolate walnut brownies ever!!

Updated: Aug 23, 2020

Have you ever woken up craving chocolate brownies ? You know what im talking about - fudgy-oozy-nutty-chocolate-brownies nuked in the microwave for 30 seconds with a dollop of your favorite ice cream. Well, dont worry I've got you covered :)

These brownies are easy to make and will fullfill your craziest chocolate fantasies. Make sure you double batch if you wanna freeze some for a later day.

Ingredients :

Semi-sweet dark chocolate chips - 260 grams

Butter - 115 grams

Granulated sugar - 1/2 cup

Eggs - 3 medium size [ Egg replacement strategies here ]

Salt - 1/4 tsp

Vanilla essence - 1 tsp

All-purpose flour - 1/2 cup

Cocoa powder - 1/4 cup

Walnuts - 1/3 cup chopped [ If you want to make it nut free, just leave the nuts out and bake 5 mins less ]

Recipe :

  1. Preheat oven to 350 deg F.

  2. Prep a 8 inch square tin (bread loaf/round tin of a similar size) with butter and parchment paper.I usually brush some melted butter on the bottom and then add one parchment paper rectangle.I then add more butter and add a second parchment perpendicular. If you make the paper longer on each sides, it makes it easy to release the brownies later.

  3. Melt the chocolate using one of the methods here.

  4. Add butter to the melted chocolate and once fully mixed, keep aside to cool down.

  5. In a separate bowl, add sugar .

  6. Add one egg at a time and mix into the sugar using a whisk or fork.

  7. Now add the salt and vanilla essence.

  8. Check your chocolate to see if its cooled down. Your chocolate is cool enough if you can dip your pinky in the middle of the bowl and it doesnt burn you. If its not cool enough, set aside and wait a few minutes. Stirring it with a spoon helps release some heat.

  9. Add chocolate to the egg mixture and whisk. You should get a beautiful thick glossy mixture.

  10. Using a hand sieve, add the flour + cocoa to the mixture. If you donot have a sieve, i suggest adding in parts and mixing in between to prevent lumps.

  11. Gently mix it together using a spatula.

  12. Add chopped walnuts and mix again.

  13. Pour batter into the prepped tin and tap gently on the counter to level the mixture.

  14. Bake for 25 mins. Remove from oven and let it rest in tin for 10 mins.

  15. Use the parchment paper to release from tin, cut into any shape desired and enjoy with coffee or ice cream.
